I am not quite sure what the weather is doing around here. Friday we had sun, then clouds, then dark clouds and a weird 5 minute blizzard. The blizzard was these weird balls of ice – like hail but teeny tiny. It looked like miniature packing peanuts. 🙂

With the cold and wet lingering, I haven’t quite put away my soup recipes. I worked a couple in this week, until we can get some consistent weather. We have repeated some meals from the past few weeks because they are so good. And I threw in a new Veggie Quesadilla recipe to try out; I am really hoping everyone just tries them before I have to explain there is no chicken and it is all veggies and cheese! 😉

I went with six meatless meals. Trying to keep the costs down, and we get protein in for breakfast usually, so I figured we could skip a little meat at dinner.

Split Pea Soup (definitely a keeper!)

Creamy chicken and rice Soup

Mac and Cheese

Spinach Pesto Fusilli

Pizza (Aldi’s Take & Bake)

Pasta e Cici (yum!)

Corn and Potato Chowder

Goulash

Veggie Quesadillas

Lunch

PB&J x 3

Leftovers x 3

Cheese and crackers x 2

Buttered noodles and snacky stuff

Breakfast

Pancakes (new recipe with bread flour – fingers crossed!)

PB& Chocolate Chip Baked Oatmeal

Chocolate Chip Banana Bread

Coffee Cake x 2

Eggs x 3
