Menu Plan

This week, I planned out just one week of meals. Things change so often now around here, as far as timing for meals, I have found it easier to just do a week at a time. I am sticking to homemade items, as much as possible. I love homemade tortillas, but knowing this week was going to be hectic, I just purchase tortillas from the store. All bread and snacks will be homemade, though, as those are not as hands-on and time-consuming as tortillas are. Also, there are no red meat meals this week. I did not do that on purpose! 🙂 I just started listing a few of our favorite meals and a few easy ones, and those just all happened to be either chicken or meatless! We do have some bacon on the menu…does that count as red meat??

Breakfast

Eggs, Bacon, fruit

Whole Wheat Cinnamon Raisin Quick Bread, fruit

Baked Oatmeal

Cheesy Hashbrown Casserole

Coffee Cake

Eggs, beer bread

Lunch

Snacky lunch (on our super busy day)

PB&J x 2, carrots and ranch, fruit, chips

Leftovers x 2

Quesadillas, fruit, yogurt

Peanut Butter Apple sandwiches, yogurt with maple syrup, chips

Dinner

Mustard Glazed Chicken Thighs, brown rice, salad

Mac and Cheese

Enchilada Casserole, Corn

Chicken, Brown Rice and Veggie Casserole, Salad

Bacon Tortellini Bake, Applesauce

Broccoli Cheese Soup, Biscuits, Salad

Pizza

Snacks

Air-popped popcorn

Cinnamon popcorn mix

Energy Balls

Beer Bread (made with sprite) x 2

PB Chocolate Chip Oat Squares

Marshmallows (yes, this is a snack. we have lots leftover from our fire pit times this summer. may as well eat them!)
