Bake It Tuesday

This past weekend, I created a new version of our regular granola bars. I decided I wanted less refined sugar and more peanut butter. The following was my creation….and it was pretty darn good, too! I think I like them better than the “old” ones!

2 cups rolled oats

1/4 cup wheat germ

1 cup flour

1/2 cup chocolate chips

1/2 cup peanut butter (I used “natural” – just peanuts and sea salt)

1/2 cup coconut oil, melted

1/2 cup honey

2 tsp vanilla

1 egg, beaten

1/2 tsp salt

1/2 cup chopped peanuts

Mix the oats, wheat germ flour and chocolate chips together. Make a well and add in the wet ingredients and the salt. Stir well to combine it all. Spread in greased 9×13 pan. Top with chopped peanuts and press down slightly to “stick” them to top of batter. Bake 350 degrees for about 25 minutes, or until edges are browned and top is golden. Remove from oven and let sit for 5 minutes. Cut bars and lay on cooling rack until completely cooled. Store in sealed container (refrigerate if not going to eat in a few days, especially if using natural peanut butter).

One of those with a glass of milk. Mmmm. Delicious!
