Recipe: Beefy Bean and Biscuits

I had to change up my meal plan because I am super low on cheese. My plan was to make the pasta casserole tonight, but we like A LOT of cheese on it. I came up with this yummy dish that uses less cheese but still the same sauce I would have put in the pasta casserole.

Beefy Bean and Biscuits

1 1/3 pounds ground beef

1 can diced tomatoes, undrained ( I used a pint of our home canned tomatoes)

1tsp chili powder

3 oz cream cheese

1 jar pasta sauce (24 oz)- store bought or homemade

1 can beans (any kind), drained and rinsed

1/4 cup grated parmesan cheese

1 cup corn

1 container canned biscuits (or homemade baking powder biscuit dough)

Brown beef and drain grease. Add tomatoes, pasta sauce, corn, cream cheese, beans, and chili powder. Stir to combine and heat on medium-low heat until cream cheese melts.

Pour mixture into 13×9 baking dish. Sprinkle paremsan cheese over. Separate biscuits and place on top of beef and sauce mixture. (optional: sprinkle some cheddar cheese over top the biscuits.)

Bake at 375 degrees for about 25 minutes or until biscuits are golden.
