Recipe: Fast Feast

Tonight, we are making dinner fast. The kids and I went over to the park by the river at 4:00, which we NEVER do, and now we’re home scrambling to get food on the table quickly. 🙂

I came up with this just now, although I am certain that most moms have something quick they turn to on last-minute evenings like this!

4 frozen, cooked chicken breasts (boneless, skinless)

2 cups pre-chopped veggies (I am using a bag of Birds Eye Recipe Ready Vegetables)

Olive Oil

Chili Powder

Garlic Powder

Sea Salt

Pepper

Cumin

2 cups uncooked rice

1 can beans, your preference on kind

1. Cook rice according to directions on box/bag.

2. Heat oil in large skillet on medium heat. Lie chicken in pan and pour veggies in over top of chicken. Add seasonings to taste. Cover and cook until warmed through. Add beans. Reduce heat to low and heat beans through.

3. Add rice to chicken mixture (shred/chop chicken, if desired, before adding rice). Sprinkle with cheese.

I am serving this with some raw veggies (carrots, cherry tomatoes, cucumbers) and ranch dip.

My rice is almost finished, so I am going to mix it all together very soon! A nice, easy, pretty healthy meal in about 30 minutes! And no prep work!! 🙂
