Recipe: One Pan Poor Man’s Dinner

I don’t know what the actual name for this dish is. My mom used to make this when I was younger. I like the ease of it and that we almost always have the 3 ingredients needed!

One Man Poor Man’s Dinner

1.5 lbs ground beef

Carrots, sliced into 1/4″ medallions

Potatoes, peeled and sliced thin

1. Press meat into bottom of a skillet. Season with salt and pepper or whatever seasoning your family likes on their hamburger.

2. Place carrots evenly over top of the meat. You can use as many or as few carrots as you’d like. I typically have 2 full layers of carrots lying on top of the meat.

3. Place the potatoes evenly on top of the carrots. Again, use as many as you’d like. Salt and pepper the top of the potato layer.

4. Add 1/4 cup water to skillet and heat over medium heat until you hear the meat sizzle loudly. Cover and lower heat to medium-low and let sit for about 30 minutes. Remove lid and check done-ness of carrots and potatoes. If still tough/crunchy, cover again and cook until done.

I enjoy only dirtying one pan for this meal. It covers the meat and veggies categories for a healthy meal, too. The fat from the meat gives great flavor to the carrots and potatoes also.

If I buy grass-fed local beef, it’d cost about $9 for the meat, maybe $2 for the organic carrots and $3 for the organic potatoes. So, $14 for this whole meal means about $2.33 a person here. That’s not too shabby for an organic/local meal!
