This week’s baking item was for dinner, instead of our usual snack or breakfast food. It is called Cheeseburger Pie. We devoured it, and I realized that I definitely need to double the recipe for next time.
1 lb ground meat (I used antibiotic- free ground turkey)
1/2 onion, finely chopped
1 can (15 oz) organic diced tomatoes, drained
1/2 cup milk (we used organic)
3 eggs (used local, free-range)
3/4 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp pepper
1/2 tsp salt
1 cup shredded cheddar (used organic)
Brown meat with onion. Drain liquid. Place meat mix in baking dish (10 inch pie dish, 8×8 baking dish). Pour well- drained tomatoes over meat. In a mixing bowl whisk together milk, eggs, baking powder and soda, flour, salt and pepper. Pour over meat and tomatoes. Bake at 400 degrees for 25 mins or until middle is set. Sprinkle cheese on top and bake again for 5 mins or until knife inserted in middle comes out clean.
