I am sure there are plenty of variations of Lasagna Rollups out there. This is what I created 2 nights ago, when I was running out of time for dinner and noticed I didn’t have all the ingredients to make regular lasagna. Super simple, super yummy!
12 (unbroken) lasagna noodles
1 lb ground beef
1 – 26 oz jar spaghetti/pasta sauce
8 ounces shredded Mozzarella cheese
2/3 cup grated Parmesan cheese
Cook lasagna noodles, leaving slightly al dente. Drain and cool.
While cooling, brown meat. Drain. Mix in pasta sauce, onion powder and garlic powder (to taste). Mix in 1/3 cup of Parmesan into meat sauce.
On each noodle, pour a line of the meat sauce and sprinkle a couple teaspoons of the Mozzarella cheese. Carefully roll up noodle and place, seam side down, in 9 x 13 baking dish. After all noodles are rolled and in dish, pour remaining sauce over and sprinkle remainder of both cheeses on.
Bake at 350 degrees for about 30 minutes.
Yum-o! I had to use whole wheat lasagna noodles (not my favorite), BUT even with that I enjoyed it. And it’s good the next day as leftovers, too, just like lasagna.
I would like to try this with ricotta and egg and homemade sauce, like we enjoy our regular lasagna. But, it was nice to have something super yummy to put together with limited ingredients…and it still be healthy and nourishing.
