I can’t remember where I first came across the original version of this recipe, but I changed it slightly to suit our family’s tastes. The result? I healthier raisin oatmeal cookie than my “normal” recipe.
Raisin Oatmeal Cookies
1 cup flour (I used a whole wheat pastry flour)
1 tsp baking powder
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1 cup packed brown sugar
1/4 cup vanilla yogurt
2 TBSP oil
1 large egg
1 tsp vanilla
1 1/2 cup quick oats
1 cup raisins
Combine flour, baking powder, cinnamon, baking soda, and salt in small bowl.
Combine sugar, yogurt, oil, egg and vanilla in large bowl. Add dry mixture in and mix. Then stir in oats and raisins.
Drop by rounded teaspoonful 2 inches apart on parchment lined cookie sheets. Bake at 350 degrees for 10-12 minutes until very lightly browned. Cook on rack.
Enjoy some warm cookies with a huge glass of milk! 🙂
