Yesterday became super hectic around 4pm, and I didn’t even glance at my menu plan to see what was laid out for dinner. I knew it was a meatless meal, but I ignored the plan and made up something fun and new.
I’m sure other moms have tried this before or created something similar, but I was so happy with this creation I am definitely going to use it again. Even my husband, who doesn’t really like corn bread, enjoyed this one!
Corn Dog Muffins
2 boxes Jiffy corn bread mix (or use a homemade corn bread recipe)
3 hot dogs, cut into 1″ pieces
Cheese – we used slices of American Cheese and cut them into smaller squares
Mix up the corn bread as the box says. Preheat oven to 400 degrees. Line muffin pans with liners or grease them. (This recipe made 15 muffins, so if you’re greasing the cups just do one pan until you know how many of the second pan you’ll need…so you don’t end up with more greased cups than you need.) Pour 1 TBSP of cornbread mixture into 12 muffins cups. Place one piece of hot dog into mixture, and top with cheese. Place another TBSP of mixture over hot dog and cheese, to cover it. Do same for second muffin pan, only as much as the remainder of the mixture allows (obviously).
Bake at 400 degrees for about 15 or 20 minutes, until the tops are golden brown. Remove from pan right away. BE CAREFUL! The hot dog and cheese inside will be HOT!!! I had to cut them open to cool before I could feed them to the kids.
We had this with green beans, some buttered noodles, and applesauce. It was a great FAST meal we needed to have before heading to church for AWANA.The kids loved finding a surprise inside their muffins. 🙂
