I remember making and freezing some sort of tater tot casserole while I was pregnant with my 3rd child, but I apparently lost the paper I had written it on. Couldn’t find it for anything! I searched online and found something similar but with chicken instead of the ground beef I remember using.
I tweaked the chicken recipe and came up with the following:
Chicken Tater Tot Casserole
2 lb bag of frozen tater tots
2+ cups of cooked chicken, chopped or shredded
2 cups shredded cheese (we used Mexican blend)
4 TBSP butter
1/4 cup flour
2 cups milk
1 can cream of chicken soup
1/3 cup chopped onion
1 chicken bouillon cube
Preheat oven to 350 degrees. Place tater tots on bottom of 13×9 glass baking dish. Place cooked chicken on top of tater tots. Sprinkle cheese over chicken layer. In pan on stove, melt butter on medium heat. Add flour to melted butter and whisk to combine. Cook for about 1 minute. Slowly whisk in milk. Continue stirring and cooking until the mixture starts to boil and thicken. Reduce heat to simmer and add soup, onion, and bouillon cube. Stir combine well. Pour sauce over cheese layer and bake at 350 for about 40 minutes. Cool for about 5 minutes before serving.
We had this last night with corn and a Romaine salad. Yummy! No, this is NOT a healthy meal, but it was good comfort food on a cool evening! And it was very easy to make, so I enjoyed not having to do a lot of thinking. 🙂
